- 1-cup rice boiled and cooled
- 1/4 tsp salt, beat together the salt and eggs
- 1 coarsely chopped onion
- 2 finely chopped cloves garlic
- 1 Tbls finely chopped celery
- 1 tsp chilli sauce
- 1 tsp soya sauce
- 1 tsp vinegar
- 2 Tbsp oil
Method:
- Heat one tablespoon of oil in a wok. Add the eggs and scramble them and Keep aside.
- Heat the oil in wok, and stir-fry the garlic and onion together over high heat until the onion is transparent.
- Add the rice, chilli sauce, Soya sauce, vinegar, celery and mix. Continue to stir-fry over high heat for a few minutes.
- Add the scrambled eggs and serve hot.
2. Chinese Egg Fried Rice:
The vegetables and egg make for a healthy wholesome meal. This recipe of egg fried rice is a wholesome and filling meal that is worth a try. Ingredients:
- 1-cup rice
- Two eggs
- 1/2 cup chopped and parboiled French beans
- 1/2 cup chopped and parboiled carrots
- 1/2 cup chopped capsicum
- 1/2 cup chopped celery
- 1 cup chopped spring onion whites and greens
- 1 tbsp soy sauce
- 1 tbsp oil
- Salt and freshly ground black pepper to taste
- Oil for greasing
Method:
- Boil the rice. Each grain of the cooked rice should be separate. Keep aside.
- Whisk together the eggs, 2 tbsp of water, salt, and pepper.
- Grease a non-stick pan and pour the egg batter over it and cook on a medium flame for 2 to 3 minutes or until both the sides are lightly browned. Once cooled, cut into bite-sized pieces and keep aside.
- Heat the oil in a wok; add all the vegetables and sauté on a medium flame for 2 to 3 minutes.
- Add the rice, omelet pieces, soya sauce, and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Serve Hot.
3. Oriental Egg Fried Rice:
The Chinese spice powder adds a unique taste to this egg fried rice, making this fried rice very sumptuous and appetizing. Ingredients:
- 1 cup of long grain rice
- 1 cup frozen peas
- 2 tablespoon sunflower oil
- 2 chopped back bacon rashers
- 1 red pepper, chopped
- 2 cloves garlic, thinly sliced
- 2 eggs
- 1 tsp Chinese five-spice powder
Method:
- Boil the rice and two minutes before draining, add the peas and cook it for 2-3 minutes. Drain the rice and peas.
- Stir fry the bacon in sunflower oil until crisp. Add the red pepper, the garlic cloves and stir-fry for another 2 minutes.
- Add beaten eggs, to the pan, and stir-fry until just sets.

- Heat the oil in a frying pan.

Ingredients:
- 2 cups cooked basmati rice,
- four eggs boiled and chopped
- 2 chopped green chillies
- 2 finely chopped small onions
- 1 teaspoon ginger paste
- 1 teaspoon soy sauce
- Little white pepper powder
- Garlic flakes
- 3/4 teaspoon garam masala
- 1 teaspoon red chilli powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon vinegar
- 2 tablespoon oil
- Finely chopped Fresh coriander leaves

- Fry chopped onions for a few seconds in a pan.
- Add ginger, green chillies and garlic.
- Next, add the rice and chopped eggs.
- Add salt, white pepper powder, soy sauce, red chilli powder, garam masala powder, turmeric powder, and vinegar and toss everything.
- Cover the pan, and cook for a few more minutes to blend the flavours of boiled eggs, rice, and spices.
